Wild Turkey Nuggets
Wild Turkey Nuggets Recipe
Ingredients:
1-2lbs of wild turkey breast
Oil for frying
For Brine:
· 2 quarts of water
· ½ cup salt
· ¼ cup sugar, brown sugar, maple syrup, or honey
· 2-4 bay leaves
· 1-2 lemons, halved
· 1 cup pickle juice (optional)
For Marinade:
· 1 cup buttermilk or milk
· Hot sauce to taste
Breading/Dredge
· 1 1/2 cup flour
· 1/2 tsp black pepper
· 1 tpsp paprika
· 1-2 tsp of dried thyme
· 1-2 tsp of dried sage
· 1-2 tsp of celery seeds
Instructions:
1. Brine the Turkey
a. Make the brine (without pickle juice) by simmering ingredients until dissolved
b. Let cool completely to room temp or below
c. Add pickle juice and turkey
d. Refrigerate for 4-6 hours
2. Marinate the Turkey:
a. Combined the drained turkey and marinade in a plastic bag or container to cover.
b. Marinate 4-24hrs
3. Prepare the Coating:
a. Combine all dredge ingredients in a separate bowl and mix
4. Coat the Turkey:
a. Remove the turkey from the buttermilk, allowing excess to drip off.
b. Dredge each piece in the seasoned flour mixture, ensuring an even coat.
5. Fry the Nuggets:
a. Heat oil in a deep fryer or large skillet to 350°F (175°C).
b. Fry the turkey nuggets in batches for about 3-4 minutes per side, or until golden brown and cooked through.
6. Drain and Serve:
a. Remove the nuggets from the oil and drain on paper towels.
b. Serve hot with your favorite dipping sauce.
